Juicy Baked Stuffed Tomato Recipe | Jacques Pépin Cooking at Home | KQED
Let's all welcome the return of one of the most versatile fruits by making Jacques Pépin's baked stuffed tomato recipe. This juicy plant-based dish is satisfying as a main course. If you're not a tomato fan, you could also use the stuffing recipe to top baked fish or chicken. Jacques uses what he has on hand so feel free to improvise.
What you'll need:
2 slices of bread, 1 large egg, chives, 1/2 cup spinach, 1/4 cup Swiss cheese, 1/4 cup onions, 2 - 3 mushrooms, 1 clove garlic, 2 large tomatoes, salt and pepper, olive oil, parmesan cheese. Optional: sausage.

I grew up watching Jacques cook. He taught me how to cook for myself, family and friends. It amazes me how he rarely uses measuring tools for his ingredients. Look how he proportionately got it right for those 4 tomato pieces. Crazy.

I'm literally staying with her and my other sister out here in Washington state. Would be cool if you could see this and respond. These are the best! I've been watching Jacques since the 70's, top notch!
The same thing they did to The Filmore; they did here in Miami. Put an expressway thru Historic Overtown which to this day separates Miami Overtown neighborhood(a black neighborhood) from Miami Beach(which was whites only at the time after dark: blacks couldn't go at night unless they had a pass to work). Black entertainers could perform on the beach but would have to stay in Overtown at The Hampton House Hotel(Dr. King, Malcolm X, Jim Brown & Muhammad Ali all once stayed there & others). To this day there are less than 1% of black ppl who live on Miami South Beach. Too expensive!
